5 Easy & Yummy Salad Ideas

Spring is the perfect time to step up your salad game!
It’s so much fun to experiment with new combinations of fruits, grains, and veggies, but you should keep in mind that portion control is essential.
I aim for 4-6 oz of lean protein, and I always check the serving size of my carbs (grains +  fruits) to keep it under 35g per salad. Also be aware of the serving size of cheese- I usually use between half an ounce to a whole ounce depending on the time of day and the rest of my food for the day. With those guidelines in mind, here are five of my favorite creations.

1. AvoDijon Salad

Greens: arugula
Protein: shredded chicken breast or navy beans
Other fruit/veggies: 1/2 an avocado
Seasoning: 1 T whole grain Dijon mustard (I loooove Trader Joe’s!)

2. Mediterranean Fusion Salad

Greens: mixed
Grains: couscous, orzo or quinoa or a mix (I use TJ’a harvest grains blend!)
Protein: grilled chicken
Fruit: strawberries
Seasoning: goat cheese + lemon juice

3. Baby Blue

Greens: baby kale
Protein: all natural turkey or chicken sausage, chopped
Fruit: blueberries
Seasoning: hemp hearts

4. Comfort Food Salad

Greens: kale/broccoli/brussels sprouts blend
Protein: Chicken or beans + chopped pecans
Carbs: plain smashed/baked sweet potato
Seasoning: salt, pepper, paprika, thyme, and avocado or olive oil.

5. Salsa Splash
