10 Kinds of Kale Chips

{By Ellery Sadler}

These amazing, crispy little pieces of salty goodness can change your life. Or at least what you have for lunch. They are deliciously satisfying, versatile, and very easy to make.

1. Basic Kale Chips

serves 3-5  (depending on how much you want)

  • 4-5 cups of kale (torn into bite size pieces)
  •  salt & pepper to taste
  •  1-3 tablespoons olive oil

Toss all the ingredients together in a bowl and then spread out on a greased cookie sheet. Bake at 350 for 5-10 minutes, until the edges are crispy and browned. Enjoy!

2. Coconut Ginger

  • 4-5 cups of kale (torn into bite size pieces)
  • 1/2 cup unsweetened shredded coconut
  • 2 tablespoons coconut oil
  • 1/4 cup coconut milk
  • kosher salt
  • dash of ginger (if you don’t like ginger, you can substitute garlic)

Combine coconut oil, ginger, and coconut milk in a bowl. Microwave for 45 seconds until melted, stir to combine. Chop the shredded coconut in a food processor until finely diced. Add in the coconut milk mixture and continue to process until almost smooth. In a large bowl pour the coconut mixture over the kale and stir to coat. Spread on a  greased cookie sheet, salt to taste, and bake at 350 for 5-10 minutes.

3. Soy & Sesame

Take your basic kale recipe and add 2-3 tablespoons soy sauce and 1 1/2 tablespoon sesame seeds. Toss together and bake the same as usual.

4. Parmesan & Asiago

Using the basic kale chip recipe, add 1/4 cup freshly grated parmesan and toss together. Spread on the cookie sheet and top with 1/4 cup grated asiago cheese. Bake until crispy.

5. Garlic & Onion

This is probably my favorite way to eat kale chips. Add 2 teaspoons of garlic salt and 2-3 tablespoons diced dried onion. Toss and get ready for a salty, crunchy, semi-addictive treat.

6. Sea Salt & Vinegar

Ooooh yes! Like potato chips, but healthy, these kale chips are delicious. Mix 1/4 cup sherry vinegar or white wine vinegar with 2 tsp salt and the kale. Bake as usual.

7. Maple & Smoked Chipotle

Using the basic kale chip recipe, add 2-3 tablespoons of maple syrup (depending on how sweet you like it, you can add more or less) and 2 teaspoons of smoked chipotle tabasco sauce. Add salt & pepper to taste and enjoy the sweet heat of these amazing kale chips.

8. Lemon Dill

Add the juice of one lemon and 1-2 teaspoons of fresh dill to the kale. Add salt and pepper to taste. The citrus taste of the lemon cuts back the flavor of the kale, so even if you aren’t a huge kale fan, this is a great recipe.

9. Chili Lime

To the basic kale recipe, add the juice of one lime, 1 teaspoon of lime zest, and 2 teaspoons of chili powder. Yummm.

10. Caramelized Onion, Chicken & Parmesan

This is comfort food y’all. Sauté one onion and 2 cloves of garlic in a pan until caramelized and brown. In a small bowl dissolve 1 chicken bullion cube in 1/4 cup of water. Add the onions and chicken stock to the kale and mix. Spread on the cookie sheet and top with 1/3 cup of freshly grated parmesan.

There’s no excuse to not eat healthy when healthy tastes this good.
