Yummy Lentil Sloppy Joe Sliders

Ok, I am not a lentil fan but these are delicious. These amazing little sandwiches are perfect for lunch or dinner. The lentils, onions, peppers and cold coleslaw are a heavenly combination. Easy, healthy, and tasty ~ I highly recommend you try them.

These are easy to make and yummy to eat!

Lentil Sloppy Joe’s 

  • 1 lb. brown lentils
  • 1 cup red & green bell pepper diced
  • 1 onion finely diced
  • 3 (or more) cloves minced garlic
  • 1 1/2 cup ketchup
  • 1 tbl chili powder
  • 1 tsp cumin
  • 1/8 tsp paprika
  • salt & pepper to taste
  • 2 tbl maple syrup
  • 1/2 tsp mustard
  • 1/2 tsp white vinegar

Add 5 cups of water to lentils in a large pot. Simmer, covered, for about 15-20 minutes or until tender. Drain and set aside.

For the sauce, mix the ketchup with the cumin, paprika, chili powder, and salt and pepper to taste. Add the mustard, vinegar, and maple syrup. Pour in 1/4 cup water and stir until blended.

Sauté peppers, onions, and garlic in a pan on the stovetop. After the onions are slightly caramelized and the peppers tender, add in the ‘joe’ sauce and simmer for 10 minutes. Add the cooked lentils.

World’s Most Amazing Coleslaw  

  • 2 tbl brown sugar
  • 2 tbl olive oil
  • 1 lime juiced
  • 1 jalapeño minced
  • 1 head purple cabbage
  • 2 green onions
  • 2 carrots, peeled & grated

Mix all ingredients together and chill for about an hour (if you have time, otherwise it tastes great even right away) before serving.

Put a scoop of lentils on a toasted bun, top with the coleslaw, and enjoy!
