Chipotle Zucchini and Sweet Potato Fritters

As it gets close to Thanksgiving and life gets busy my very soul craves apple pie and chocolate and fall-ish sort of desserts, I thought it would be a good idea to try some new healthier recipes. And this is one of my favorites.

Easy to make and with only a  couple ingredients, this is perfect for a quick snack, weeknight dinner, or easy lunch. It’s crispy and a yummy and healthy. What more could you want? (Chocolate, of course. But we’re talking about being healthy, so that isn’t an option.)

Chipotle Zucchini and Sweet Potato Fritters

Ingredients

  • 1 1/2 cup grated zucchini
  • 1 cup grated sweet potato
  • 1 tsp chipotle seasoning (or as much as you want)
  • Salt and pepper to taste
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • A dash of breadcrumbs if you need them

Combing all ingredients together. The mixture will be slightly wet, but should be able to hold together when pressed into cakes. Form into 4-6 cakes and set in a sauté pan with a teaspoon of oil. Cook about 5 minutes on each side. Serve and enjoy!

This is also excellent with a side of baked cauliflower :)
